Pasta with Shrimp and Broccoli

Pasta with Shrimp and Broccoli
Serves 4

Ingredients:
1 lb pasta, ideally Penne
1 lb shrimp, cleaned and deveined
1 head broccoli, cut into small flowerets
3 cloves garlic, crushed
can chopped tomatoes
can chicken broth
Fresh basil leaves, torn
Salt and pepper

Instructions:
Cook pasta according to package instructions. Drain and set aside.

In a frying pan, saut the shrimp and garlic in a splash of olive oil. Add the broccoli flowerets and tomatoes and simmer for about 3-5 minutes. Then add the broth and the fresh basil, stir, and allow to simmer gently for another 5 minutes.

Pour the sauce over the cooked pasta, mix well. Sprinkle with additional basil leaves and serve immediately with parmesan cheese.
