My sorority is doing a philanthropy night during recruitment and we want to do a craft or activity that relates to our philanthropy which is diabetes research and awareness. Does any one have any idea oof what we could do?

Not quite following your reasoning – individuals with diabetes are perfectly capable of crafts and any other activity, depending on one’s physical ability.
I would disallow anything to do with ingesting large quantities of carbohydrates.

Here are a few ideas that I’ve come up with. You can modify & customize to suit your particular needs/requirements & the age/skill of participants, etc.
http://www.craftsnscraps.com/awareness/wristbands.html [the diabetes wristband is further down the page] — You could make similar wristbands using paper or any other material ?
You could make simple, fun, healthy recipes for kids with diabetes that they can make themselves or with their parents.
Make a diabetes Board – where people can display a daily inspirational message, quotation, experience, a fact, statistic, …. &/or decorate as they wish .
Make a sampler quilt. Pass around squares of different colors [to act as a block]. On this square, each person can write, color, draw, glue….stuff relating to diabetes management or diabetes nutrition. You can provide an assortment of decorative items. Then glue all the squares together on a larger frame to make a quilt that can be displayed for it’s combined information, experience, & creativity.
T-shirts : You can distribute a t-shirt to each of the participants & have a collection of sprays, fabric markers, etc. Let each person come up with a slogan or something relating to diabetes research, hope, determination, etc. & decorate their t-shirt accordingly.
*** If you can convert any of the activities into a ‘competition’, with a reward [even a token certificate] for the best or the quickest or the most innovative, etc. then it helps to increase interest & participation !

A sorority on my campus with the same philanthropy made little cute bags to hold testing supplies out of felt, they also decorated food guidelines, blood sugar charts and record keeping notebooks. If you have an annual philanthropy you could make posters for it, leave off the dates if you don’t know them.
If you have a local philanthropy you are also involved with you could incorporate that too. My sorority’s national philanthropy is Campfire USA, but our craft for recruitment reflected our involved with a local women’s/children’s shelter.
Don’t use anything too messy like glitter, and keep the craft simple so that those not artistically inclined don’t feel uncomfortable. The craft should be secondary to the conversations and making bonds with the potential new members. If you use a formalized rotation system, keep that in mind.
