Mixed Salad with Feta Cheese and Blueberries
Serves either 2 as a main lunch or 4 as side dish

Ingredients:
Mixed salad leaves
5 oz fresh blueberries
4 oz walnuts, chopped and toasted
8oz feta cheese, crumbled

Dressing:
4 tbsp extra-virgin olive oil
2 tbsp red wine vinegar
1 tbsp honey
Salt and pepper

Instructions:
Arrange the salad leaves on a large serving platter. Sprinkle with feta cheese and top with blueberries and walnuts.

Meanwhile, place all dressing ingredients in a jar with a lid and shake until well combined. Season well. Drizzle over the salad and serve immediately.
