Herbs ‘N Spices: Summer Herb Tips

A quick reminder on feeding and watering herbs-water only during drought conditions or when first transplanting. Don’t mulch unless it’s an herb that prefers moist conditions and the general rule is to not fertilize. Certainly if you do, use only organic fertilizer and go lightly.

COMFREY FOR YOU AND THE SOIL

Comfrey is good for your soil, whether it’s for herbs, flowers or vegetables. The deep roots will grow down up to 10 inches and loosen soil that is compacted. Consider this if you have a rough, dry area like a pasture that you are trying to convert to a garden area. There is a dwarf variety available too!

You may also harvest and use the comfrey to brew a tea that can be used to cleanse rashes and acne. Pour one cup of boiling water, and pour over 1/2 cup of leaves.

Brew for 15 minutes or so, then strain. Use a wash cloth to cleanse your face with the tea gently. It will store in the refrigerator for a few days. It shouldn’t be taken internally.

HERB FLOWER PETALS

Dry the petals of roses, calendula, scented geraniums and pinks on screens in a dry, darkened spot such as an attic or shed. When they are dry place them in a jar to use as an addition to potpourri or bath teas.

HERB RECIPE

Below is a nice recipe to use with fresh vegetables:

Garden Vegetables with Herb Butter

Ingredients:

* 1 pound small new potatoes, scrubbed
* 2 1/2 cups fresh peas
* 1/4 cup butter or margarine
* 2 tsp. chopped fresh basil
* 1 1/2 tsp. chopped fresh thyme
* 1 tsp chopped fresh tarragon
* 1/4 tsp. salt
* 1/4 tsp. freshly ground black pepper

Cut potatoes into halves or quarters. Place in a medium saucepan with enough water to cover. Bring to boil; reduce heat, cover and simmer until tender. (8 to 10 minutes) Add peas and cook for about 5 more minutes. Drain vegetables and set aside. In the same pan add the butter. Heat till melted, then add the herbs, salt and pepper.

Return the vegetables to the pan and toss to coat. Serves 6.
