Serves 2
1 cup of cottage cheese (low fat)
1 Granny Smith apple, cored and chopped
2 tomatoes, chopped
1 spring onion, finely chopped
Mixed lettuce leaves
Red and green grapes, chopped
Fresh black pepper
Freshly chopped parsley
Instructions:
In a bowl, combine all ingredients, except the lettuce leaves and parsley. Arrange mixed lettuce leaves on a serving plate, add the cottage cheese mixture, season with black pepper and sprinkle with parsley/
Serve immediately with cut up vegetables, such as carrot sticks, celery sticks and whole grain crackers.
This makes a refreshing and light lunch.
