Chinese Greens with Almonds

Chinese Greens with Almonds
Serves about 4-5

Ingredients:
2 tbsp vegetable oil
1 lb Chinese greens (bok choi, baby spinach etc)r
1 cup spring onions, chopped, including the green parts
2 cloves garlic
tsp fresh ginger, grated
tsp sesame oil
cup chopped almonds
Salt and pepper

Instructions:
Heat the vegetable oil in a skillet. Add the onions, garlic, ginger and stir-fry for a few minutes. Then stir in the Chinese greens. Drizzle with sesame oil and season. Saut for a few minutes until the greens start wilting.

Remove from heat, stir in the almonds and serve immediately.
