Recipe – How to Make Chai Tea

* 3 sticks cinnamon
* 12 cardamom pods
* 1/2 whole nutmeg, grated
* 3 whole cloves
* 6 whole black peppercorns
* 2 tea bags (English Breakfast is excellent)
* 1 cup (250 ml) milk or soy milk (or less to taste)
* Sugar to taste
Place all ingredients except milk and sugar in a saucepan. Add 4 cups (1 L) of water. Cover and bring to a boil over moderate heat.
Reduce heat and simmer 10 to 20 minutes.
Add milk until the color is a light brownish tan and heat through without boiling. Strain and serve, adding sugar to taste. Serves 4.
